Ingredients

For the Watermelon Rounds:

1 large seedless watermelon

A pinch of salt

1 tablespoon of fresh lime juice

Optional: A sprinkle of chili powder for a kick

For the Ice Cream Filling:

2 cups of your favorite ice cream (vanilla, coconut, or raspberry work great)

1 tablespoon of honey or agave syrup (if you prefer extra sweetness)

Optional: Crushed nuts or sprinkles for added crunch

Instructions

Prepare the Watermelon:

    - Start by cutting the watermelon in half. Then, carefully slice each half into 1-inch thick rounds. Use a cookie cutter to shape the rounds into fun shapes, or you can leave them as large rounds depending on your preference.

      Add Flavors:

        - In a small bowl, whisk together the lime juice and a pinch of salt. If you like a bit of spice, add a pinch of chili powder. Brush this mixture over one side of each watermelon round to enhance their flavor.

          Freeze the Watermelon:

            - Place the seasoned watermelon rounds on a baking sheet lined with parchment paper and freeze them for about 1-2 hours, or until they are firm.

              Prepare the Ice Cream Filling:

                - While the watermelon is freezing, soften the ice cream slightly to make it easier to scoop. If you're adding honey or agave syrup, mix it into the ice cream until well combined. You can also fold in crushed nuts or sprinkles at this point.

                  Assemble the Sandwiches:

                    - Once the watermelon rounds are frozen, take them out of the freezer. Scoop a generous amount of the ice cream mixture onto the flat side of one watermelon round, then top it with another round to create a sandwich. Gently press them together.

                      Final Freeze:

                        - Arrange the watermelon ice cream sandwiches on the baking sheet and place them back in the freezer for another 30 minutes to set.

                          Serve:

                            - Once the ice cream has hardened, slice each sandwich in half if desired and serve immediately for a refreshing treat that’s perfect for summer!
