4 cups seedless watermelon, cubed

1 medium cucumber, peeled and diced

1/4 cup fresh mint leaves, plus extra for garnish

2 tablespoons lime juice (freshly squeezed)

2 tablespoons honey or agave syrup (adjust based on sweetness preference)

1 cup coconut water or sparkling water

Ice cubes

Lime slices (for garnish)

Prepare the Ingredients: Start by cubing the watermelon and dicing the cucumber, ensuring that your pieces are roughly the same size for easy blending.

    Blend the Watermelon: In a blender, add the cubed watermelon and blend until smooth. If you prefer a thinner consistency, you can strain the mixture through a fine mesh sieve or cheesecloth to remove excess pulp.

      Mix in the Cucumber: To the watermelon juice, add the diced cucumber, mint leaves, lime juice, and honey (or agave). Blend again until all ingredients are well combined.

        Adjust Sweetness & Add Coconut Water: Taste the mixture and adjust sweetness if needed by adding more honey/agave. Then, slowly stir in coconut water (or sparkling water) to give it a refreshing fizz.

          Serve Over Ice: Fill glasses with ice cubes and pour the watermelon cucumber mixture over the top. Stir gently to combine.
