Vietnamese Summer Rolls with Chicken

For the rolls:

8 rice paper wrappers

1 cup cooked and shredded chicken breast (grilled or poached)

1 cup fresh lettuce leaves (butter or romaine)

1 medium carrot, julienned

1 medium cucumber, julienned

1 cup fresh herbs (mint, cilantro, and Thai basil)

1 cup bean sprouts

For the dipping sauce:

3 tablespoons hoisin sauce

2 tablespoons peanut butter (or almond butter)

1 tablespoon rice vinegar

1 teaspoon lime juice

1 tablespoon water (adjust for consistency)

Crushed peanuts for garnish (optional)

Instructions
 

Prep the Filling:

    - Ensure your chicken is cooked, cooled, and shredded. Prepare all vegetables by slicing them into thin strips - carrots, cucumber, and wash the lettuce and herbs thoroughly.

      Prepare the Rice Paper:

        - Fill a shallow dish with warm water. One at a time, dip a rice paper wrapper into the warm water for about 10-15 seconds or until it's pliable. Lay it flat on a clean, damp surface.

          Assemble the Rolls:

            - On the lower third of the rice paper, layer a few pieces of shredded chicken, followed by a lettuce leaf, some cucumber, carrot, herbs, and a small handful of bean sprouts. Be careful not to overfill.

              - Fold the sides of the rice paper inward over the filling, then starting from the bottom, roll it up tightly towards the top to enclose the filling. Repeat with the remaining rice wrappers and filling.

                Make the Dipping Sauce:

                  - In a small bowl, mix together hoisin sauce, peanut butter, rice vinegar, lime juice, and water. Stir until smooth, adjusting the consistency with additional water if necessary. Top with crushed peanuts for added crunch.

                    Serve:

                      - Plate the summer rolls and serve immediately with the dipping sauce on the side. Enjoy fresh and chilled!
