Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 cup buttermilk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Butter or oil for cooking

Instructions

Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon until well mixed.

Mix Wet Ingredients: In a separate bowl, beat the buttermilk, egg, melted butter, and vanilla extract until smooth and combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it's okay if there are a few lumps. Be careful not to over-mix!

Prepare the Griddle: Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil to prevent sticking.

Cook the Pancakes: Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes, or until golden brown.

Serve: Remove pancakes from the skillet and keep warm. Repeat until all the batter is used. Serve warm with maple syrup, fresh fruit, or a sprinkle of powdered sugar for a delightful finish.
