Turkey and Mushroom Penne

12 ounces penne pasta

1 pound ground turkey

8 ounces cremini mushrooms, sliced

1 medium onion, chopped

3 cloves garlic, minced

1 cup spinach, roughly chopped

1 cup canned diced tomatoes (with juice)

1 cup chicken broth

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

2 tablespoons olive oil

½ cup grated Parmesan cheese (plus more for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Penne:

    In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

      Sauté the Turkey:

        In a large skillet over medium heat, heat the olive oil. Add the ground turkey and season with salt and pepper. Cook until browned, about 5-7 minutes, breaking it up into small pieces with a spatula.

          Add Onions and Garlic:

            Once the turkey is browned, add the chopped onion and minced garlic to the skillet. Sauté for another 3-4 minutes until the onions are translucent and fragrant.

              Incorporate Mushrooms:

                Stir in the sliced cremini mushrooms and cook for another 5 minutes until they are softened.

                  Combine Ingredients:

                      Mix in Spinach and Pasta:
