1 can (14 oz) sweetened condensed milk

4 large egg yolks

Zest of 2 key limes

1/2 teaspoon vanilla extract

1 cup heavy cream

8 oz white chocolate, chopped

1 teaspoon gelatin powder

2 tablespoons cold water

1/4 cup sugar

1/4 teaspoon vanilla extract

1 cup whipped cream

Instructions
 

Make the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until well combined.

        - Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes until set. Remove from oven and let cool completely.

          Prepare the Key Lime Filling:

            - In a mixing bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, lime zest, and vanilla extract until smooth.

              - Pour the filling into the cooled crust, then bake for an additional 15-20 minutes until the filling is slightly set but still slightly wobbly in the center. Let it cool to room temperature before refrigerating for at least 2 hours.

                Make the White Chocolate Mousse Layer:

                  - In a small bowl, sprinkle the gelatin over cold water and let it sit for 5 minutes until it blooms.

                    - Meanwhile, in a double boiler or microwave, melt the white chocolate and stir until smooth.

                      - Once melted, stir in the bloomed gelatin until dissolved.

                        - In a mixing bowl, whip the heavy cream with sugar and vanilla until soft peaks form.

                          - Gently fold the melted white chocolate mixture into the whipped cream until just combined.

                            Assemble the Pie:

                              - Pour the white chocolate mousse over the chilled key lime filling in the pie crust. Spread it evenly.
