Ingredients

For the Brownie Layer:

1/2 cup (1 stick) unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup chocolate chips (optional for extra fudginess)

For the Cookie Layer:

1/2 cup (1 stick) unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Brownie Layer:

      - In a medium saucepan over low heat, melt the butter for the brownie layer. Remove from heat and stir in the sugar, eggs, and vanilla until well combined.

        - In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in the chocolate chips if using. Spread this thick brownie batter evenly into the prepared baking pan.

          Prepare the Cookie Layer:

            - In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together with a hand mixer until light and fluffy.

              - Add the egg and vanilla, mixing until incorporated.

                - In another bowl, whisk together the flour, baking soda, and salt. Mix into the wet ingredients until just combined. Stir in the chocolate chips.

                  Layering the Browkies:

                    - Carefully drop spoonfuls of the cookie dough over the brownie layer. Use a spatula to spread it out gently to cover the brownie layer as best as you can. Don’t worry about making it perfect; it’s okay if some brownie is peeking through.

                      Bake:

                        - Bake in the preheated oven for about 25-30 minutes, or until the cookie layer is golden brown and a toothpick inserted in the center comes out with just a few moist crumbs (not wet batter).

                          Cool and Serve:

                            - Allow the browkies to cool in the pan on a wire rack for at least 10-15 minutes. Using the parchment overhang, lift them out of the pan and let cool completely on the wire rack.

                              - Cut into squares or rectangles, serve, and enjoy your fudgy, chewy browkies!
