Ingredients

1 French baguette, sliced into 1/2-inch pieces

2 cups cherry tomatoes, halved

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

2 tablespoons balsamic vinegar

1 tablespoon olive oil

2 tablespoons fresh basil, chopped

1 teaspoon garlic powder

Salt and pepper to taste

Optional: grated parmesan cheese for topping

Instructions

Prepare the Baguette: Preheat your oven to 400°F (200°C). Arrange the sliced baguette pieces on a baking sheet. Brush one side of each slice with olive oil. Bake for 8-10 minutes or until golden and crispy. Remove from the oven and let them cool slightly.

Mix Tomato Topping: In a medium bowl, combine the halved cherry tomatoes, balsamic vinegar, chopped basil, garlic powder, salt, and pepper. Toss gently to mix and set aside to marinate for about 10 minutes so the flavors develop.

Prepare Creamy Spread: In another bowl, blend the softened cream cheese and Greek yogurt until smooth and creamy. Add a pinch of salt and pepper to taste, adjusting as necessary.

Assemble the Bruschetta: Spread a generous layer of the cream cheese mixture over the toasted side of each baguette slice. Top with a spoonful of the marinated tomato mixture.

Finish and Serve: Optional - sprinkle grated parmesan cheese over the top for added richness. Drizzle with a little more balsamic vinegar if desired. Serve immediately while the bruschetta is fresh and the baguette slices are still crispy.
