Sweet & Spicy BBQ Tofu Wraps

Ingredients
  

1 block (14 oz) firm tofu, drained and pressed

1 cup BBQ sauce (store-bought or homemade)

2 tablespoons maple syrup

1 tablespoon sriracha (adjust to taste)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

4 large whole wheat tortillas

1 cup shredded red cabbage

1 cup shredded carrots

1 ripe avocado, sliced

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Tofu:

    - Slice the pressed tofu into 1/2-inch thick slabs. Pat them dry again with paper towels to remove excess moisture.

      Marinate the Tofu:

        - In a mixing bowl, combine the BBQ sauce, maple syrup, sriracha, olive oil, smoked paprika, garlic powder, salt, and pepper. Whisk until well blended.

          - Add the sliced tofu to the marinade, ensuring each piece is thoroughly coated. Cover and let it marinate for at least 30 minutes (or overnight in the refrigerator for more flavor).

            Cook the Tofu:

              - Preheat a non-stick skillet or grill pan over medium-high heat. Add the marinated tofu slabs to the pan, reserving some marinade for basting. Cook for about 4-5 minutes on each side until golden brown and slightly crispy. Baste with the remaining marinade during cooking for extra flavor.

                Prepare the Wraps:

                  - Lay the whole wheat tortillas flat on a clean surface. In the middle of each tortilla, layer the cooked tofu, shredded red cabbage, shredded carrots, and avocado slices. Garnish with fresh cilantro.

                    Wrap It Up:

                      - Fold in the sides of the tortilla over the filling, then roll from the bottom up to create a tight wrap. Repeat for all tortillas.

                        Serve:
