Strawberry Brie Puff Bites

1 sheet of puff pastry (thawed)

1 cup fresh strawberries, hulled and sliced

8 oz Brie cheese, rinds removed and cut into small pieces

2 tablespoons honey

1 tablespoon balsamic glaze (optional)

1 egg, beaten (for egg wash)

Fresh mint leaves (for garnish)

Pinch of salt, to taste

Flour for dusting

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Puff Pastry: Lightly flour a clean surface and roll out the thawed puff pastry sheet to smooth it out. Cut the pastry into 2-3 inch squares.

      Assemble the Bites: Place about 1-2 slices of strawberry in the center of each pastry square. Top it with a small piece of Brie cheese and drizzle a little honey over it. Sprinkle a pinch of salt to enhance the flavors.

        Seal the Edges: Take the corners of the pastry square and gently fold them towards the center over the filling, pinching the edges to seal them securely.

          Egg Wash: Place each assembled puff bite on a lined baking sheet. Brush the tops with the beaten egg to give them a beautiful golden brown finish when baked.

            Bake: Bake in the preheated oven for about 15-18 minutes, or until the pastry is puffed and golden brown.

              Top with Balsamic Glaze: Once they are out of the oven, you can drizzle a little balsamic glaze over the warm bites for an extra layer of flavor (optional).

                Garnish and Serve: Allow the bites to cool slightly. Garnish with fresh mint leaves and serve warm.
