Ingredients

1 lb (450g) ground beef (or turkey for a leaner option)

1 cup breadcrumbs (preferably whole wheat)

1/2 cup shredded cheddar cheese

1/2 cup finely diced onion

1/2 cup chopped bell pepper (any color)

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 large egg

1/4 cup milk

1/4 cup BBQ sauce (plus extra for topping)

1 teaspoon Worcestershire sauce

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or oil.

Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, shredded cheddar cheese, diced onion, chopped bell pepper, minced garlic, and parsley. Mix until evenly distributed.

Add Wet Ingredients: In a separate small bowl, whisk together the egg, milk, BBQ sauce, Worcestershire sauce, smoked paprika, salt, and black pepper. Pour this mixture into the meat mixture and incorporate everything thoroughly until well combined.

Shape Muffins: Using your hands, divide the meat mixture into 12 equal portions and shape them into free-form muffin shapes. Place each muffin in the greased muffin tin, pressing down slightly.

Add BBQ Sauce Topping: Generously drizzle additional BBQ sauce over the tops of each meatloaf muffin, ensuring they’re nicely coated for that sticky finish.

Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the meatloaf muffins are cooked through (an internal temperature of 160°F/70°C).

Serve: Once baked, remove from the oven and allow the muffins to cool for a few minutes. Gently remove them from the muffin tin and serve warm, garnished with extra parsley if desired.

Enjoy: These Sticky BBQ Meatloaf Muffins can be enjoyed on their own, served with a side salad, or alongside your favorite mashed potatoes for a comforting meal.
