Ingredients

2 cups fresh pineapple, diced

1 medium red onion, finely chopped

1 jalapeño pepper, seeds removed and minced

1 red bell pepper, finely chopped

1 garlic clove, minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon honey (or agave syrup for a vegan option)

Salt to taste

Optional: 1 avocado, diced

Instructions

Prep the Pineapple: Start by peeling, coring, and dicing the fresh pineapple into small, uniform pieces to ensure even flavor distribution.

Chop the Vegetables: Finely chop the red onion and red bell pepper. For the jalapeño, carefully remove the seeds (to control the heat) and mince it finely. If you prefer a less spicy salsa, you can reduce the amount of jalapeño or omit the seeds.

Mix It Up: In a large mixing bowl, combine the diced pineapple, chopped red onion, minced jalapeño, and red bell pepper.

Add the Flavor: Stir in the minced garlic, chopped cilantro, and lime juice to the bowl.

Sweeten and Season: Drizzle in the honey (or agave syrup) and mix well to combine all the ingredients. Taste and add salt as needed.

Optional Avocado: If using, gently fold in the diced avocado, being careful not to mash it.

Chill: Cover the salsa and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Serve and Enjoy: Serve your Spicy Pineapple Salsa with tortilla chips, grilled fish, or as a topping for tacos. Enjoy the tropical heat!
