1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup maple syrup

2 tablespoons soy sauce

1 tablespoon sriracha (adjust for spice level)

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for extra heat)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the maple syrup, soy sauce, sriracha, apple cider vinegar, minced garlic, grated ginger, olive oil, salt, black pepper, smoked paprika, and cayenne pepper (if using). Add the chicken pieces into the bowl, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

      Bake the Chicken: Arrange the marinated chicken bites in a single layer on the prepared baking sheet. Reserve any remaining marinade for basting later. Bake in the preheated oven for about 15 minutes.

        Baste and Continue Cooking: After 15 minutes, take the baking sheet out of the oven and baste the chicken bites with the reserved marinade. Return the sheet to the oven and bake for an additional 10-12 minutes, or until the chicken is cooked through and caramelized, reaching an internal temperature of 165°F (74°C).
