12 oz spaghetti

2 cups fresh spinach, roughly chopped

1 cup sun-dried tomatoes, packed in oil, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti and set it aside.

    Sauté Garlic and Sun-Dried Tomatoes: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then add the chopped sun-dried tomatoes and cook for another 2-3 minutes, allowing the flavors to meld.

      Prepare the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well and let it simmer for about 3-4 minutes until slightly thickened. Add the grated Parmesan cheese, dried basil, dried oregano, and red pepper flakes (if using). Season with salt and pepper to taste.

        Add Spinach and Pasta: Gently fold in the chopped spinach, cooking for an additional 2-3 minutes until wilted. Then, add the cooked spaghetti to the skillet, tossing everything together. If the sauce is too thick, gradually add some reserved pasta water until you reach the desired consistency.
