1 tablespoon baking powder

3/4 cup unsalted butter, melted

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

3 teaspoons vanilla extract

1 cup whole milk

2 cups diced apples (peeled and cored)

1 tablespoon lemon juice

1/4 cup granulated sugar (for coating apples)

1 teaspoon ground cinnamon (for coating apples)

1/4 cup coarse sugar (for topping)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Butter a 9x13 inch baking dish and set it aside.

    Prepare the Apples: In a mixing bowl, combine the diced apples with lemon juice, 1/4 cup granulated sugar, and 1 teaspoon cinnamon. Toss until the apples are well-coated, then set aside to allow the flavors to meld.

      Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, and 1 teaspoon cinnamon until well mixed. Set aside.

        Prepare the Batter: In a large mixing bowl, blend the melted butter with both granulated and brown sugars until smooth. Add in the eggs and vanilla extract, and whisk until fully combined. Gradually stir in the dry ingredients, alternating with the whole milk until just combined. Do not overmix.

          Assemble the Cobbler: Pour half of the batter into the bottom of the prepared baking dish, using a spatula to spread it evenly. Next, layer the coated apples over the batter, spreading them out evenly. Pour the remaining batter over the apples, smoothing the top gently.
