For the Smothered Pork Chops:

4 bone-in pork chops (about 1-inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 cup heavy cream

Fresh parsley, chopped (for garnish)

For the Scalloped Potato Casserole:

4 medium russet potatoes, peeled and thinly sliced

2 cups shredded sharp cheddar cheese

1 cup diced onion

2 cups heavy cream (or milk for a lighter version)

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon nutmeg

Instructions
 

Prepare the Scalloped Potatoes:

    - Preheat your oven to 375°F (190°C).

      - In a large mixing bowl, combine the heavy cream, flour, garlic powder, salt, black pepper, and nutmeg. Whisk until smooth.

        - Layer half of the sliced potatoes in a greased 9x13-inch baking dish.

          - Sprinkle half of the diced onions and half of the shredded cheddar cheese over the potatoes.

            - Pour half of the cream mixture over the first layer.

              - Repeat the layers with the remaining potatoes, onions, cheese, and cream mixture.

                - Cover the dish with aluminum foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 20-25 minutes until the top is golden and bubbly.

                  Cook the Smothered Pork Chops:

                    - Season the pork chops with salt and pepper on both sides.

                      - In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear them for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

                        - In the same skillet, add the sliced onions and cook until they soften, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

                          - Stir in the chicken broth, Worcestershire sauce, Dijon mustard, smoked paprika, and dried thyme. Bring to a simmer, scraping up any brown bits from the bottom of the skillet.

                            - Add the heavy cream and return the pork chops to the skillet. Cover and let cook on low heat for 10-15 minutes until the pork chops are cooked through (internal temperature should reach 145°F or 63°C).

                              Combine and Serve:

                                - Once everything is cooked, place the smothered pork chops on a serving platter and spoon the onion and cream sauce over them.

                                  - Serve with a generous portion of cheesy scalloped potatoes. Garnish with chopped fresh parsley for a pop of color.
