For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese (softened)

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

⅓ cup sour cream

½ cup mini marshmallows

½ cup chocolate chips

For the topping:

1 cup mini marshmallows

½ cup chocolate chips

¼ cup crushed graham crackers (for garnish)

Instructions
 

Prepare the crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined and the mixture resembles wet sand. Press the mixture evenly into the bottom of a 9x9-inch baking pan lined with parchment paper. Bake for 8-10 minutes, then remove and let cool.

    Make the cheesecake filling: In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully combined.

      Incorporate mix-ins: Gently fold in the mini marshmallows and chocolate chips into the cheesecake mixture.

        Assemble the bars: Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake in the preheated oven for about 25-30 minutes or until the edges are set, and the center is slightly jiggly. It will firm up as it cools.
