Shrimp and Grits with Spicy Butter

For the Grits:

1 cup stone-ground grits

4 cups chicken broth (or water)

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons unsalted butter

Salt and pepper to taste

For the Shrimp:

1 pound large shrimp, peeled and deveined

4 slices of bacon, chopped

3 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon Old Bay seasoning

Salt and pepper to taste

2 tablespoons chopped fresh parsley (for garnish)

For the Spicy Butter:

½ cup unsalted butter, softened

1 tablespoon hot sauce (such as Frank’s RedHot)

½ teaspoon garlic powder

½ teaspoon paprika

Instructions
 

Prepare the Grits:

    - In a medium saucepan, bring the chicken broth to a boil. Slowly add the stone-ground grits while whisking continuously to prevent lumps.

      - Reduce the heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until the grits are creamy and tender.

        - Stir in the heavy cream, cheddar cheese, and butter. Season with salt and pepper to taste. Keep warm.

          Make the Spicy Butter:

            - In a small bowl, combine the softened butter, hot sauce, garlic powder, paprika, and salt. Mix well until blended. Set aside.

              Cook the Shrimp:

                - In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon pieces and drain on paper towels, leaving the drippings in the skillet.

                  - In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

                    - Add the shrimp to the skillet along with the lemon juice, smoked paprika, cayenne pepper, Old Bay seasoning, salt, and pepper.

                      - Cook the shrimp for 2-3 minutes on each side, or until they are pink and opaque.

                        Combine and Serve:

                          - Once the shrimp are cooked, stir in the spicy butter until melted and combined.

                            - Serve the creamy grits in bowls topped with the garlicky, spicy shrimp mixture.

                              - Garnish with crispy bacon pieces and chopped fresh parsley for an extra touch.
