4 cups water or low-sodium chicken broth

1 cup shredded sharp cheddar cheese

1/2 cup heavy cream

2 tablespoons unsalted butter

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1/4 cup green onions, chopped (for garnish)

1 tablespoon lemon juice

For the Cajun Cream:

1 cup heavy cream

2 tablespoons Cajun seasoning

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Grits: In a medium saucepan, bring the water or chicken broth to a boil. Gradually whisk in the stone-ground grits to avoid lumps. Reduce heat to low and simmer uncovered, stirring frequently, until the grits are thickened and creamy (about 20-25 minutes). Stir in butter, heavy cream, and cheddar cheese once the grits are cooked. Season with salt and pepper to taste. Keep warm.
