For the Cookies:

1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup dark chocolate chips

1 cup semi-sweet chocolate chips

For the Salted Caramel:

1 cup granulated sugar

6 tablespoons unsalted butter, cut into pieces

1/2 cup heavy cream

1 teaspoon sea salt (plus extra for sprinkling)

Instructions
 

Make the Salted Caramel:

    - In a medium saucepan, heat the granulated sugar over medium heat. Stir constantly until melted and turns a deep amber color (about 8-10 minutes).

      - Carefully whisk in the butter until melted and smooth. Be cautious as the mixture will bubble.

        - Slowly pour in the heavy cream while continuing to whisk. The mixture will bubble up again; keep whisking until combined and smooth.

          - Remove from heat, stir in 1 teaspoon sea salt, and let it cool to room temperature.

            Prepare the Cookie Dough:

              - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

                - In a large bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.

                  - Beat in the eggs one at a time, then mix in the vanilla extract.

                    - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients until combined.

                      - Fold in the dark and semi-sweet chocolate chips.

                        Assemble the Cookies:

                          - Using a cookie scoop or tablespoon, drop a generous amount of cookie dough onto the prepared baking sheet, leaving space between each cookie.
