1 can (15 oz) cannellini beans, drained and rinsed

1 head of garlic

2 tablespoons olive oil, divided

1 teaspoon fresh lemon juice

1 teaspoon fresh rosemary, finely chopped (plus extra for garnish)

Salt and pepper, to taste

4 slices of rustic bread (like sourdough or whole grain)

Fresh arugula or baby spinach, for topping

Optional: Red pepper flakes for a hint of spice

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap in aluminum foil. Roast in the oven for 30-35 minutes until the cloves are soft and caramelized. Allow to cool slightly, then squeeze the garlic out of the skins into a small bowl.

    Prepare the White Bean Mixture: In a food processor, combine the roasted garlic, drained cannellini beans, remaining tablespoon of olive oil, lemon juice, and chopped rosemary. Blend until you achieve a creamy, yet slightly chunky consistency. Season with salt and pepper to taste.
