Roasted Garlic Herb Butter Potatoes

2 pounds baby potatoes (mixed colors if possible)

1/2 cup unsalted butter, softened

1 head of garlic

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, chopped, for garnish

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Garlic: Slice the top off the head of garlic to expose the cloves. Drizzle with a bit of olive oil and wrap it in aluminum foil. This will amplify the flavor of the garlic and make it easier to mix into the butter.

      Boil the Potatoes: In a large pot, bring salted water to a boil. Add the baby potatoes and cook for about 10-15 minutes, or until fork-tender. Drain and allow to cool slightly.

        Make the Herb Butter: While the potatoes are cooling, combine the softened butter, chopped rosemary, thyme, salt, pepper, and lemon zest in a bowl. Once the garlic is roasted (about 30-35 minutes in the oven), squeeze the roasted cloves into the butter mixture and stir until well combined.

          Toss the Potatoes: Place the drained potatoes in a mixing bowl. Pour the herb garlic butter over the warm potatoes and toss gently until they are well coated.

            Roast the Potatoes: Spread the buttered potatoes onto a baking sheet lined with parchment paper in a single layer. Roast in the preheated oven for 20-25 minutes, turning halfway through, until golden brown and crispy on the outside.

              Garnish and Serve: Remove the potatoes from the oven, sprinkle with freshly chopped parsley, and serve immediately as a delicious side dish.
