Roasted Beet Goat Cheese Salad

4 medium-sized beets, scrubbed and trimmed

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

5 cups mixed baby greens (arugula, spinach, and kale)

1/2 cup crumbled goat cheese

1/4 cup walnuts, toasted and roughly chopped

1 small red onion, thinly sliced

1/4 cup balsamic vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Instructions
 

Roast the Beets: Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast for 45-60 minutes, or until tender when pierced with a fork. Once done, let them cool, then peel the skins off (using gloves can help avoid stained hands). Cut into wedges.

    Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, honey/maple syrup, Dijon mustard, remaining tablespoon of olive oil, salt, and pepper until uniformly combined. Adjust seasoning to taste.

      Assemble the Salad: In a large bowl, combine the mixed greens, roasted beet wedges, sliced red onion, and toasted walnuts. Drizzle with the balsamic dressing and toss gently to combine, ensuring the greens are lightly coated.
