12 oz large pasta shells

1 lb ground beef

1 medium onion, chopped

3 cloves garlic, minced

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes, undrained

1 tsp Italian seasoning

½ tsp salt

¼ tsp black pepper

1 cup cottage cheese

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta shells according to package instructions until al dente. Drain and set aside.

      Make the Beef Mixture: In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat. Add chopped onion and minced garlic to the skillet, cooking until softened, about 3-4 minutes.

        Add Tomato Sauce: Stir in the tomato sauce, diced tomatoes (with juice), Italian seasoning, salt, and pepper. Bring to a simmer and let it cook for about 5 minutes. Remove from heat.

          Combine Cheeses: In a medium bowl, mix together cottage cheese, ricotta cheese, and 1 cup of shredded mozzarella until well combined.

            Stuff the Shells: Take each cooked shell and fill it generously with the cheese mixture. Place the stuffed shells side by side in the greased baking dish.

              Layer with Beef and Sauce: Pour the beef mixture evenly over the stuffed shells. Sprinkle the remaining ½ cup of mozzarella and the Parmesan cheese on top.

                Bake: Cover the casserole with aluminum foil (to prevent burning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Allow to cool for 5 minutes before serving. Garnish with freshly chopped parsley for a pop of color.
