1 ¾ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

½ cup unsalted butter, softened

3 large eggs

1 cup crushed pineapple, drained (reserve juice)

1 cup shredded coconut

1 cup chopped pecans or walnuts

1 cup confectioners’ sugar

2-3 tablespoons of reserved pineapple juice

A pinch of salt for icing

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.

    Mix Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      Cream Butter and Sugar: In another bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Then, add the vanilla extract and mix until smooth.

          Combine Ingredients: Gradually add the dry ingredient mixture to the wet mixture, alternating with the crushed pineapple (and any remaining juice) and mixing just until combined.

            Incorporate Coconut and Nuts: Fold in the shredded coconut and chopped pecans or walnuts with a spatula, being careful not to overmix.

              Bake the Cake: Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

                Cool the Cake: Allow the cake to cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.

                  Prepare the Icing: In a small bowl, combine the confectioners’ sugar with 2 tablespoons of the reserved pineapple juice and a pinch of salt. Stir until smooth. If the icing is too thick, add more pineapple juice until you reach the desired consistency.

                    Ice the Cake: Once the cake is completely cool, drizzle the icing over the top, allowing it to flow down the sides.
