1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon black pepper

Salt to taste

For the Breading:

1 cup all-purpose flour

1 cup panko breadcrumbs

1/2 cup cornmeal

1 tablespoon dried parsley

1 teaspoon cayenne pepper (optional for heat)

For the Pineapple Glaze:

1 cup fresh pineapple, finely chopped

1/2 cup brown sugar

1/4 cup soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

Marinate the Chicken: In a large bowl, combine the chicken pieces, buttermilk, garlic powder, onion powder, paprika, black pepper, and salt. Mix well to ensure all the chicken is coated. Cover with plastic wrap and refrigerate for at least 1 hour or overnight for the best flavor.

    Prepare the Breading: In a separate bowl, combine the all-purpose flour, panko breadcrumbs, cornmeal, dried parsley, and cayenne pepper (if using). Mix well and set aside.

      Coat the Chicken: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Remove the marinated chicken from the refrigerator. Taking each piece, let any excess buttermilk drip off, then dip it into the breading mixture, pressing gently to ensure the coating sticks well. Place the coated pieces on the prepared baking sheet.
