1 medium ripe pineapple, peeled and diced

1 large cucumber, diced

1 red bell pepper, diced

¼ red onion, finely chopped

½ cup fresh cilantro, chopped

1 small jalapeño, seeded and minced (optional for heat)

2 tablespoons lime juice (freshly squeezed)

1 tablespoon honey or agave syrup

Salt and pepper to taste

½ cup feta cheese, crumbled (optional)

Prepare the Ingredients: Start by peeling and dicing the pineapple into bite-sized pieces. Dice the cucumber and red bell pepper, and finely chop the red onion and cilantro. If using, seed and finely mince the jalapeño.

    Mix the Base: In a large mixing bowl, combine the diced pineapple, cucumber, red bell pepper, red onion, cilantro, and jalapeño. Toss gently to combine.

      Make the Dressing: In a small bowl, whisk together the lime juice and honey (or agave) until well blended. Season with a pinch of salt and pepper to taste.

        Combine Salad and Dressing: Pour the dressing over the mixed salad ingredients and toss everything together until evenly coated.
