Ingredients

2 cups fresh pineapple chunks (or canned, drained)

1 cup shredded sharp cheddar cheese

1 cup crushed buttery crackers (like Ritz)

1/2 cup granulated sugar

1/4 cup unsalted butter, melted

1/4 cup all-purpose flour

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped pecans (optional)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C).

Prepare the baking dish: Lightly grease a 9x13 inch baking dish.

Mix the pineapple: In a large bowl, combine the fresh pineapple chunks with sugar, flour, vanilla extract, and salt. Mix well until combined, making sure the pineapple is evenly coated.

Layer ingredients: Spread the pineapple mixture evenly into the prepared baking dish.

Add cheese: Sprinkle the shredded sharp cheddar cheese over the pineapple layer.

Prepare topping: In a separate bowl, combine the crushed crackers, melted butter, and cinnamon. Mix until the crackers are well coated.

Top the casserole: Evenly distribute the cracker mixture over the cheese layer. If using, sprinkle the chopped pecans over the top for an added crunch.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly.

Cool and serve: Remove from the oven and let it cool for about 5-10 minutes before serving. Enjoy warm!
