Pimento cheese is often described as the "caviar of the South," a fitting title for a dish that has become synonymous with Southern hospitality. This creamy spread typically consists of sharp cheddar cheese, mayonnaise, and pimentos, which are small, sweet red peppers that provide a unique flavor and vibrant color. Though its exact origins are a topic of debate, pimento cheese can be traced back to the early 20th century, gaining popularity as a versatile dip, spread, or appetizer.

Instructions

Prepare the Pimento Cheese Filling:

    - In a mixing bowl, combine the grated sharp cheddar cheese, softened cream cheese, diced pimentos, Worcestershire sauce, garlic powder, and cayenne pepper.

      - Season with salt and pepper to taste and mix until well combined. Set aside in the refrigerator to chill while preparing the burgers.

        Make the Burger Patties:

          - In a large bowl, combine the ground beef, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well using your hands, but do not overwork the meat.

            - Divide the beef mixture into 8 equal portions (about ¾ pound each). Shape each portion into a thin patty.

              Stuff the Burgers:

                - Take 4 of the burger patties and place a generous tablespoon of the chilled pimento cheese filling in the center of each.

                  - Top each filled patty with another patty. Press the edges together firmly to seal the filling inside. Ensure that the pimento cheese is completely enclosed in the ground beef to prevent leaking when cooking.

                    Cook the Burgers:

                      - Preheat your grill or skillet over medium-high heat. Once hot, place the stuffed burgers on the grill or skillet, cooking for about 5–6 minutes per side (for medium-rare) or until they reach your desired doneness. Avoid pressing the patties while cooking to keep them juicy.

                        Assemble the Burgers:

                          - Toast the brioche buns on the grill for about 1 minute or until golden brown.

                            - Place a lettuce leaf on the bottom half of each bun, followed by the cooked pimento cheese stuffed burger, sliced tomatoes, pickles, and your preferred condiments. Top with the other half of the brioche bun.

                              Serve:

                                - Serve the burgers immediately with your favorite sides, such as fries, coleslaw, or a refreshing salad. Enjoy the melty, savory delight of pimento cheese bursting from the juicy burger!
