Ingredients

2 slices of crusty whole grain bread

2 large eggs

1/4 cup fresh pesto (store-bought or homemade)

1 cup fresh arugula

1 tablespoon olive oil

Salt and pepper, to taste

Fresh lemon juice (optional, for a bright finish)

Grated Parmesan cheese, for garnish (optional)

Instructions

Toast the Bread: Start by toasting the slices of whole grain bread until golden brown and crispy in a toaster or on a skillet.

Cook the Eggs: In a non-stick skillet, heat the olive oil over medium heat. Crack the eggs into the skillet and let them cook until the whites are set but the yolks remain runny (about 2-3 minutes for sunny side up). If you prefer your eggs over easy, gently flip them and cook for another minute.

Prepare the Pesto: While the eggs are cooking, spread an even layer of fresh pesto on each slice of toasted bread.

Assemble the Toast: Once the eggs are cooked, place a fried egg on top of each piece of pesto-covered toast.

Add the Arugula: Top the eggs with a handful of fresh arugula, adding a slight peppery bite to the dish.

Season and Serve: Season with salt, pepper, and a squeeze of fresh lemon juice if desired. Optionally, sprinkle grated Parmesan cheese on top for an extra layer of flavor.

Enjoy: Serve immediately while the toast is warm and crispy, allowing the flavors to meld wonderfully.
