1 cup pecans, finely chopped

1 cup pitted dates, chopped

1/2 cup rolled oats

1/4 cup almond butter (or any nut butter)

1/4 cup maple syrup

1 tablespoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

1/4 cup shredded coconut (for rolling, optional)

Extra chopped pecans (for rolling, optional)

Instructions
 

Prepare the Base: In a food processor, combine the finely chopped pecans, pitted dates, rolled oats, almond butter, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Pulse until the mixture becomes a sticky and well-combined dough.

    Taste and Adjust: Taste the mixture and adjust the sweetness or nuttiness as desired. You can add more maple syrup or a few more pecans depending on your preference.

      Form the Balls: Using your hands, take small amounts of the mixture (about 1 tablespoon each) and roll them into balls. Place them on a baking sheet lined with parchment paper.

        Coat the Balls: If you’re using shredded coconut or extra chopped pecans, spread them out on a plate. Roll each ball in the coating until fully covered. This step is optional, but it adds a nice texture and flavor.
