1 lb large shrimp, peeled and deveined

2 ripe peaches, sliced

1 cup fresh basil leaves, chopped

1 tablespoon olive oil

1 teaspoon garlic, minced

1 tablespoon lime juice

Salt and pepper to taste

4 whole wheat tortillas or wraps

1 cup arugula or baby spinach

Optional: Crumbled feta cheese for topping

Prepare the Marinade: In a bowl, combine olive oil, minced garlic, lime juice, salt, and pepper. Add the shrimp and toss to coat. Let marinate for 15-20 minutes.

    Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.

      Assemble the Wraps: Lay one tortilla flat. Start by adding a handful of arugula or baby spinach as the base. Top with cooked shrimp, slices of peach, and chopped basil.

        Add Cheese (optional): Sprinkle crumbled feta cheese on top for an extra burst of flavor.

          Wrap it Up: Fold in the sides of the tortilla and then roll it from the bottom up to enclose the filling. Repeat with remaining tortillas.
