4 cups fresh arugula, washed and dried

2 ripe peaches, sliced

1/2 cup crumbled goat cheese (or feta for a tangier taste)

1/4 cup toasted walnuts or pecans

1/4 red onion, thinly sliced

1/3 cup balsamic vinegar

2 tablespoons honey or maple syrup

1 tablespoon Dijon mustard

1/3 cup extra virgin olive oil

Salt and pepper to taste

Prepare the Balsamic Dressing: In a small bowl, whisk together balsamic vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper. Once combined, gradually whisk in the olive oil until the dressing is emulsified and smooth. Set aside.
