2 slices of whole-grain bread

1 ripe avocado

200g mixed mushrooms (such as cremini, shiitake, and oyster)

1 tablespoon olive oil

1 garlic clove, minced

1 tablespoon fresh lemon juice

Salt and pepper, to taste

Fresh parsley or chives, for garnish

Crushed red pepper flakes (optional)

Microgreens (for garnish, optional)

Toast the Bread: Start by toasting the slices of whole-grain bread until golden brown and crispy. You can use a toaster, oven, or frying pan for this.

    Sauté the Mushrooms: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Cook the Mushrooms: Add the mixed mushrooms to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the mushrooms soften and release their juices. Season with salt and pepper to taste. If you like a little heat, feel free to add crushed red pepper flakes.
