1 cup cherry tomatoes, halved

1 large cucumber, diced

1 bell pepper (red or yellow), diced

1 small red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint leaves, chopped

Juice of 2 lemons

1/4 cup extra virgin olive oil

1 tsp dried oregano

Salt and pepper to taste

Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, and chopped red onion. Toss gently to mix the ingredients evenly.

    Add Olives and Feta: Incorporate the Kalamata olives and crumbled feta cheese into the vegetable mix. Be careful to avoid breaking up the feta too much.
