Mango Avocado Chicken Salad

Ingredients
  

2 cups cooked chicken breast, shredded or diced

1 ripe mango, diced

1 ripe avocado, diced

1 red bell pepper, finely chopped

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon honey (optional)

Salt and pepper, to taste

4 cups mixed greens (arugula, spinach, or romaine)

Instructions
 

Prepare the Ingredients: In a large mixing bowl, combine the diced mango, diced avocado, chopped red bell pepper, chopped red onion, and chopped cilantro. Gently toss to combine, being careful not to mash the avocado.

    Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper. Adjust the sweetness and seasoning according to your preference.

      Combine Chicken and Dressing: Add the cooked chicken to the bowl with the mango and avocado mixture. Pour the dressing over the salad and gently toss everything together until well coated.

        Serve: Arrange the mixed greens on plates or a large serving platter. Divide the chicken salad among the greens. Garnish with additional cilantro or lime wedges if desired.
