200g white chocolate, chopped

100ml heavy cream

Zest of 2 large lemons

3 tablespoons fresh lemon juice

1 teaspoon vanilla extract

100g crushed digestive biscuits (or graham crackers)

100g unsweetened desiccated coconut (optional, for rolling)

50g finely chopped pistachios (optional, for rolling)

Melt the Chocolate: In a heatproof bowl, combine the chopped white chocolate and heavy cream. Place over a pot of simmering water, stirring until the chocolate melts smoothly. Remove from heat.

    Add Flavor: Stir in the lemon zest, fresh lemon juice, and vanilla extract until fully combined. The mixture should be silky and aromatic.

      Incorporate Biscuits: Fold in the crushed digestive biscuits, mixing until evenly distributed. This will add a nice crunch to your truffles.

        Chill the Mixture: Cover the bowl with cling film and refrigerate for at least 2 hours, or until the mixture is firm enough to scoop.
