1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter, softened (2 sticks)

1 ½ cups granulated sugar

Zest of 2 large lemons

2 tablespoons fresh lemon juice

1 large egg

1 teaspoon vanilla extract

½ cup coarse sugar (for rolling cookies)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cookie removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to beat together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).

        Add Flavorings: Mix in the lemon zest, lemon juice, egg, and vanilla extract until well combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined. Be careful not to overmix.
