Ingredients

1 cup fresh raspberries (or frozen, thawed)

2 tablespoons granulated sugar (for raspberries)

2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar (for the base)

1 tablespoon lemon zest (from about 1 large lemon)

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

1 teaspoon pure vanilla extract

A pinch of salt

Instructions

Prepare the Raspberry Sauce:

    - In a small saucepan, combine the raspberries and 2 tablespoons of granulated sugar.

      - Cook over medium heat until the raspberries break down and the mixture becomes syrupy, about 5-7 minutes.

        - Once thickened, remove from heat and let it cool. You can slightly mash the raspberries for a smoother texture if desired.

          Make the Ice Cream Base:

            - In a large mixing bowl, whisk together the heavy cream, whole milk, 3/4 cup of granulated sugar, lemon zest, lemon juice, vanilla extract, and a pinch of salt until well combined and the sugar has dissolved completely.

              Chill the Mixture:

                - Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or up to overnight. This enhances the flavor and helps with the churning process.

                  Churn the Ice Cream:

                    - Pour the chilled mixture into your ice cream maker and churn according to the manufacturer's instructions until the ice cream reaches a soft-serve consistency. This typically takes about 20-30 minutes.

                      Marble the Raspberry Sauce:

                        - Once the ice cream is churned, transfer half of it to a freezer-safe container.

                          - Drizzle half of the raspberry sauce over the ice cream.

                            - Add the remaining ice cream on top and drizzle the rest of the raspberry sauce. Use a knife or spatula to gently swirl the raspberry sauce into the ice cream, creating a marbled effect.

                              Freeze:

                                - Cover the container with a lid or plastic wrap and freeze the ice cream for at least 4 hours or until firm.

                                  Serve:

                                    - Once the ice cream is firm, scoop it into bowls or cones and enjoy! Garnish with fresh raspberries or a wedge of lemon for an extra touch.

Prep Time: 15 minutes | Total Time: 6 hours (includes chilling and freezing) | Servings: About 6-8 servings
