Lemon Herb Chicken Sliders

1 lb ground chicken

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1/4 cup fresh parsley, finely chopped

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional for a kick)

4 slider buns

Lettuce leaves for topping

Tomato slices for topping

Mayonnaise or aioli for spread (optional)

Instructions
 

Mix the Meat: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, lemon zest, lemon juice, parsley, oregano, salt, black pepper, and red pepper flakes, if using. Mix until all ingredients are evenly incorporated, but be careful not to overmix.

    Form Patties: Divide the mixture into 4 equal portions and shape each portion into a slider-sized patty, about 1/2 inch thick.

      Cook the Patties: Preheat a grill or skillet over medium heat. Lightly grease the grill or skillet with olive oil. Cook the patties for about 5-6 minutes on each side, or until the internal temperature reaches 165°F (74°C) and they are golden brown.

        Toast the Buns: While the patties are cooking, cut the slider buns in half and toast them on the grill or in a toaster until golden brown.

          Assemble the Sliders: Spread mayonnaise or aioli on the bottom half of each toasted bun. Place a cooked chicken patty on top, followed by a couple of lettuce leaves and a slice of tomato. Top with the other half of the bun.

            Serve: Serve immediately with a side of sweet potato fries or a fresh salad for a complete meal.
