2 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon sugar

1/2 teaspoon instant yeast

3/4 cup warm water (about 110°F/43°C)

2 tablespoons olive oil

1/4 cup fresh dill, finely chopped

Zest of 1 lemon

2 tablespoons lemon juice

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

Optional: extra dill and lemon zest for garnish

Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast. Mix well to combine. Gradually add the warm water and olive oil, stirring until a sticky dough forms.

    Knead the Dough: Turn the dough out onto a floured surface. Knead for about 8-10 minutes until the dough is smooth and elastic. Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

      Prep the Filling: In a small bowl, mix together the chopped dill, lemon zest, lemon juice, garlic powder, and black pepper to form a fragrant herb mixture.

        Shape the Pitas: Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 6 equal pieces. Roll each piece into a circular shape about 1/4 inch thick.

          Add the Filling: Spread the dill and lemon mixture evenly over each circle of dough. Starting from the edge, carefully roll each circle into a log, pinching the edges to seal. Stretch and twist the log gently to form a swirl, then tuck the ends under to create a round shape.

            Second Rise: Place the swirled pitas on a floured baking sheet, cover them with a damp kitchen towel, and let them rest for another 30 minutes.

              Cook the Pitas: Preheat your oven to 475°F (245°C) or preheat a grill or skillet over medium-high heat. If using an oven, place a baking stone or an inverted baking sheet inside to heat. Once hot, place the pitas on the stone or sheet and bake for 6-8 minutes, or until puffed and lightly golden. If using a skillet, cook for about 2-3 minutes on each side until puffed and brown.

                Serve: Remove the pitas from the oven or skillet and let them cool slightly. Optionally, sprinkle with extra dill and lemon zest for garnish. Serve warm alongside dips like tzatziki or hummus, or fill them with your favorite fillings.
