1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

1 tablespoon sugar

1 large egg

3/4 cup milk

1/4 cup lemon juice (freshly squeezed)

Zest of 1 lemon

2 tablespoons melted butter (plus extra for greasing)

1 cup fresh blueberries (or frozen, thawed)

Maple syrup, for serving

Powdered sugar, for dusting (optional)

Instructions
 

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a mini muffin tin with melted butter or use silicone muffin molds for easy removal.

    Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until well combined.

      Mix Wet Ingredients: In a separate bowl, beat the egg and then add the milk, lemon juice, lemon zest, and melted butter. Mix until thoroughly combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir until just combined; do not overmix. The batter may be slightly lumpy.

          Add Blueberries: Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.

            Fill Muffin Tin: Spoon the pancake batter into the greased mini muffin tin, filling each cup about 3/4 full.

              Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.

                Cool and Remove: Once baked, allow the pancake bites to cool in the tin for about 5 minutes. Then, using a toothpick or a small spatula, gently remove them from the tin.
