1 cup rolled oats

½ cup creamy peanut butter

¼ cup honey or maple syrup

¼ cup brown sugar (packed)

1 teaspoon vanilla extract

½ teaspoon baking powder

¼ teaspoon salt

½ cup dark chocolate chips (optional)

¼ cup mixed nuts or dried fruit (optional for variation)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown sugar, baking powder, and salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, mix together the creamy peanut butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet mixture into the dry oat mixture. Stir until fully incorporated. If you’re adding chocolate chips, nuts, or fruit, fold them in now.

          Fill Muffin Tin: Spoon the mixture evenly into the prepared muffin tin, distributing the batter about ¾ full for each cup. Use the back of a spoon to press down slightly.

            Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the edges are golden and the tops are firm to the touch.
