1 pound (450g) baby carrots, peeled and trimmed

3 tablespoons unsalted butter

2 tablespoons honey

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)
