1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon paprika

1 cup (240ml) chicken broth

1 cup (240ml) sour cream

2 tablespoons all-purpose flour

2 tablespoons Dijon mustard

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

8 oz (225g) egg noodles or your favorite pasta

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Noodles: Start by cooking the egg noodles according to package instructions. Drain and set aside when done.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent. Add the sliced mushrooms, thyme, and paprika, cooking for an additional 5-7 minutes until the mushrooms are tender and have released their moisture.

        Create the Sauce: Lower the heat to medium and sprinkle the flour over the mushroom mixture, stirring to combine. Slowly pour in the chicken broth while stirring continuously, allowing the mixture to thicken.

          Add Cream and Mustard: Once the mixture has thickened, reduce the heat to low. Stir in the sour cream and Dijon mustard. Return the cooked chicken to the skillet, mixing everything together to ensure the chicken is well coated with the creamy sauce. Allow it to simmer for 2-3 minutes to heat through, adjusting salt and pepper to taste.

            Combine: Toss the cooked noodles into the skillet, stirring gently to combine them with the chicken and sauce. Allow to cook for another minute to warm everything evenly.

              Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately with grated Parmesan cheese on top if desired.
