Herbed Fish & Potato Foil Packs

Ingredients
  

4 pieces of white fish fillets (such as cod, halibut, or tilapia)

4 medium-sized potatoes, thinly sliced

1 lemon, zested and sliced into rounds

3 tablespoons olive oil

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon paprika

1 teaspoon dried thyme

Aluminum foil (enough to wrap the packs)

Instructions
 

Prepare the Foil Packs: Preheat your grill or oven to 375°F (190°C). Tear off four large sheets of aluminum foil, about 12 inches in length.

    Prepare the Potatoes: In a large bowl, combine the thinly sliced potatoes with 2 tablespoons of olive oil, salt, pepper, paprika, and dried thyme. Toss until the potatoes are evenly coated.

      Layer Ingredients: On each sheet of foil, place a portion of the seasoned potatoes in the center, forming a small bed.

        Add the Fish: Place a piece of fish on top of the potatoes. Drizzle the remaining tablespoon of olive oil over the fish. Season with salt, pepper, dill, parsley, and minced garlic.

          Add Lemon: Top each piece of fish with lemon zest and a few slices of lemon.

            Seal the Foil Packs: Fold the sides of the aluminum foil over the fish and potatoes, then fold the ends to seal tightly, ensuring no juices can escape.

              Cook: Place the foil packs on the grill or in the oven. Cook for approximately 20-25 minutes, or until the potatoes are tender and the fish flakes easily with a fork.

                Serve: Carefully open the foil packs (watch out for the steam!) and serve hot, garnished with extra herbs or lemon wedges if desired.
