1 cup canned pumpkin puree (not pumpkin pie filling)

1 cup Greek yogurt (non-fat or low-fat)

1/2 cup low-fat cream cheese

1/4 cup honey or maple syrup (adjust for sweetness)

1/4 cup vanilla protein powder (whey or plant-based)

1 teaspoon pumpkin pie spice

1 teaspoon pure vanilla extract

Pinch of salt

Optional: crushed graham crackers for topping

Blend the Base: In a blender or food processor, combine the canned pumpkin puree, Greek yogurt, low-fat cream cheese, honey or maple syrup, protein powder, pumpkin pie spice, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and creamy.

    Taste and Adjust: Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup. Blend again briefly to mix.

      Chill the Mixture: Place the blended mixture in an airtight container and refrigerate for at least 1 hour. This helps deepen the flavors.

        Churn the Ice Cream: If you have an ice cream maker, pour the chilled mixture into the machine and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (about 20-30 minutes).
