Grilled Zucchini Hummus Wraps

2 medium zucchinis, sliced lengthwise into 1/4-inch thick strips

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

4 large whole wheat tortillas or wraps

1 cup hummus (store-bought or homemade)

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 cup baby spinach leaves

1/2 cup crumbled feta cheese (optional)

Fresh basil or mint leaves for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat your grill or grill pan over medium-high heat. In a bowl, toss the zucchini strips with olive oil, salt, pepper, and garlic powder until evenly coated.

    Grill the Zucchini: Once the grill is hot, place the zucchini strips on it. Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and let them cool slightly.

      Warm Tortillas: In a dry skillet, warm the whole wheat tortillas over medium heat for about 30 seconds on each side, just until they become pliable.

        Assemble the Wrap: Spread about 1/4 cup of hummus on each tortilla, leaving a small border around the edges. Layer grilled zucchini, cherry tomatoes, red onion, baby spinach, and feta cheese (if using) on top of the hummus.

          Wrap It Up: Starting from one end, tightly roll the tortilla around the filling. Tuck in the sides as you roll to secure the contents.

            Serve or Grill the Wraps: For an extra crunch, place the wrapped tortillas back on the grill or in the skillet, seam side down, and grill for an additional 2-3 minutes until lightly browned.

              Garnish and Enjoy: Slice the wraps in half, garnish with fresh basil or mint leaves if desired, and serve immediately.
