1 lb large shrimp, peeled and deveined

3 cups fresh spinach, washed and roughly chopped

4 tablespoons olive oil

5 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice preference)

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish

Prep the Shrimp: Start by rinsing the shrimp under cold water and patting them dry with paper towels. This ensures they sauté perfectly without steaming.

    Sauté Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant, but be careful not to let it brown.

      Cook Shrimp: Add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set them aside on a plate.
