For the Chicken:

4 boneless, skinless chicken thighs

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon paprika

1/4 teaspoon black pepper

1 teaspoon salt

3 tablespoons olive oil

For the Potatoes:

1 pound baby potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a large mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, garlic powder, salt, and pepper until evenly coated. Spread them out in a single layer on a large baking sheet.

      Season the Chicken: In another bowl, combine minced garlic, grated Parmesan cheese, Italian herbs, paprika, black pepper, and salt. Add 3 tablespoons of olive oil and mix until well combined.

        Coat the Chicken: Pat the chicken thighs dry with paper towels and then coat them generously with the garlic-Parmesan mixture, ensuring that each thigh is evenly covered.

          Arrange for Baking: Place the coated chicken thighs on the same baking sheet as the potatoes, ensuring there is some space between them for even cooking.

            Bake: Put the baking sheet in the preheated oven and bake for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F/75°C) and the potatoes are tender and golden brown.

              Finishing Touches: Once done, remove from the oven and let it rest for 5 minutes. Sprinkle with fresh chopped parsley for added flavor and color.
